Menu Ideas - Week of October 10th to 16th

Week of October 10 - October 16, 2010

Sunday - Leftovers

Monday - Spaghetti with Meatballs
There's nothing special here.  I just buy the frozen premade meatballs and some Ragu and call it a day :-)

Tuesday - Leftover
Note: I was suppose to have a new recipe tonight - Spinach Chicken Roll-ups but we had so much spaghetti left that I skipped it.

Wednesday - Sweet Chicken Kabobs, Rice, and Vegetable Stir-Fry
About 4 chicken breast
1 package sliced bacon
1 cup brown sugar
2 tablespoons chili powder
salt to taste

Preheat oven to 350 degrees F

Cut chicken breast into 1-inch cubes.  Cut each bacon slice into half.  Wrap each chicken cube with bacon and secure with a wooden pick or place on kabob skewer.  Stir together brown sugar and chili powder.  Dredge wrapped chicken in mixture.  Coat a rack and broiler pan with nonstick cooking spray.  Place chicken wrap on rack in broiler pan.  Bake 350 for 35 minutes or until bacon is crisp.

Note:  This was my first time trying this and honestly it did not turn out well.  The chicken had no taste because I didn't season it thinking the bacon would be enough.  I am not sure if I am going to try this one again :-(

Rice
Instead of using water I used 2 cups beef broth and about 3 tablespoons of butter.  In addition, I put at about 1 tsp of salt in to the broth/butter mixture.  Once it boils I add 1 cup of  rice and cook for 40 minutes.  I always use brown rice.

Vegetable Stir - Fry
I use Walmarts frozen stir fry and follow the package directions adding salt and garlic powder to taste.

Thursday - Bacon Chicken Linguine
Basically since I did not like Wednesdays Kabobs I cut them up and purchased the store brought Alfredo sauce and mixed it all together.  I then cooked the sauce for a few minutes and mixed in my linguine.  It tasted pretty good.

Friday - Daughter's Pizza Night
Homemade Pizza Dough
1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt
Directions: Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes. Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.
Saturday - We went out to eat because we had family come down.
